The manufacturing process of lotion is to mix with oil phase and water phase, so the oil applied to the skin can be evenly distributed by the water phase, and avoid water to be evaporated. Oil phase and water phase cannot be mixed together, the "emulsifier" is needed to mix the two phases, with the lipophilic group of the emulsifier molecule (the part capable of binding to the oil phase) and the hydrophilic group (the part capable of binding to the water phase) to allow the oil phase to be evenly distributed in the water phase.
